Grilled Butter Chicken


Ingredients:


1 whole Chicken, sliced into 8 pcs
½ cup Butter, melted
2 tsps Salt
2 tsps Pepper
2 tbsps Liquid seasoning or Soy Sauce
1 tbsp Paprika

Directions:

1. Marinate chicken in butter, salt, pepper, seasoning and paprika. Heat griller and grill chicken until chicken is firm and fully cooked.

Grilled Squid with Honey Soy Vinaigrette












Ingredients:

For the Squid:

1 kilo Large Squid, cleaned
½ cup Liquid seasoning or Soy sauce
¼ cup chopped Garlic
¼ cup Honey
3 tbsps Calamansi Juice

For the Sauce:

1 cup Liquid seasoning or Soy sauce
¼ cup Vinegar
1 tbsp Chopped Garlic
2 tbsps chopped Onions
2 tsps chopped Ginger
½ tsp Chili
3 tbsps Olive oil

Directions:


Cook the Squid:
1. Marinate squid with liquid seasoning, garlic, honey, and calamansi juice for 15-20mins.
2. Heat griller and grill squid just until cooked through. Do not overcook so squid does not become tough. Serve with the sauce.

Make the Sauce:
1. In a tall bottle with lid, combine liquid seasoning, vinegar, garlic, onions, ginger, chilli and olive oil.
2. Cover bottle tightly and shake until all the ingredients are well blended. Serve with the squid.

Yield: 6-8 servings

Grilled T-Bone Steak










Ingredients:

12 pcs Beef steaks, T-bone cut
½ cup Liquid seasoning
¼ cup chopped Garlic
¼ cup Olive oil
1 tbsp Italian Seasoning
3 tbsps Mustard
Salt and Pepper to taste

Directions:

1. Marinate beef with liquid seasoning garlic, olive oil, Italian seasoning, mustard, salt and pepper
2. Heat griller and grill steak to preferred doneness (rare, medium rare, medium well).

Cream Cheese Brownies











For the Brownies:
½ Bar Cream cheese (1/2 of a 225g bar)
2 Cups Caster Sugar
3 pcs Whole Eggs
1 tbsp Light corn syrup
1 tbsp Coffee powder
1 cup Butter or Premium Margarine melted
1 cup sifted All purpose Flour
¾ cup sifted Cocoa Powder
¼ tsp sifted Baking Powder
¼ tsp Fine Salt
1/3 cup mini Bittersweet Chocolate chips
1/3 cup Raisins, rinsed
1/3 cup coarsely chopped Walnuts

For the Cream Cheese frosting:

1(226g) bar Cream Cheese
2 tbsps Butter
¾ cup sifted Powdered Sugar


Directions:

1. Preheat oven to 350 F. Line the bottom and side of an 8”x12” baking pan with aluminium foil. Set Aside.
2. In a large mixing bowl, using an electric mixer, combine the first five ingredients. Beat at medium speed until no trace of cream cheese is visible.
3. Pour in melted butter and beat until blended. Add remaining ingredients and bear with a rubber scraper until well incorporated.
4. Bake for 35 to 45 minutes or until a toothpick inserted in all four corners of the pan comes out clean. Chill well before applying the frosting.

To prepare the Frosting:

1. Beat all frosting ingredients in a bowl with an electric mixer until well blended. Spread the mixture over the brownies and chill for about 1 hour before slicing into bars.

Yield: 32 bars

Turbo Barbecued Chicken











Ingredients:

1 pc Whole chicken, cut into 12-14pcs
(Around 1-1 1/4 kilos)
2/3 cup Brown Sugar
3/4 cup Soy Sauce
2/3 cup Banana ketchup
1 1/2 tbps Minced Garlic
1 1/2 tbps Worcestershire Sauce
1/4 cup Calamansi Juice, about 8-9pcs

Procedure:

1. Pat chicken dry with paper towel. Set aside.
2. In a bowl, mix brown sugar, soy sauce, banana ketchup, minced garlic, worcestershire sauce, and calamansi juice. Stri well.
3. Add chicken piece by piece, making sure that each portion is marinated well. Mix well.
4. Cover and leave at room temperature for some time. Turbo bake at 350 F for 20 to 30 mins.

Preparation time: 15mins
Marination time: 30 mins, minimum. Maybve frozen for a week.
Serves 5-6persons

Decadent Brownies with Cream Cheese Filling













Ingredients:

For the Brownie base:


6 ounces(180g) Unsweetened chocolate
6 ounces(180g) Bittersweet/semisweet chocolate
1 cup Butter or Premium Margarine
1 1/2 cups Caster Sugar
1 1/2 cups Dark brown sugar, spooned lightly
5 pcs Whole eggs, graded extra large
1 1/2 cups Sifted all-purpose flour
1 1/2 tsps Sifted baking powder
3/4 tsps Fine Salt
2 cups Chocolate chips

For the Cream Cheese Filling:

1 1/2 bars (225g each) Cream Cheese
3/4 cup Caster Sugar
3 pcs Whole eggs, graded extra large
6 tbsps Butter or Premium Margarine

For the topping:

1 cup Coarsely chop Walnuts or Pecans


Procedure:

1. Preheat oven to 350 F. Line two eight-inch baking pans with foil, dull side up. Set aside.
2. In a large saucepan, combine the unsweetened and bittersweet chocolates with the butter or margarine.
3. Place over low heat, stirring continuously, until everything has almost melted completely. Transfer the chocolate mixture to a large mixing bowl. Set aside for five minutes to cool down.
4. Pour in both the caster and brown sugars. Mix well with a wooden spoon. Add eggs one at a time, beating well after each addition. Add remaining dry ingredients and beat with a wooden spoon until blended. Set aside.

Make Cream Cheese Fillig:

1. In mixing bowl, using a hand mixer, beat cream cheese, sugar, eggs, and butter until blended.
2. Pour enough of the prepared chocolate batter into prepared bake pan. Spread the batter with an offset metal spatula, completely covering the bottom of the pan. Add more batter if necessary. Pour half of the cream cheese mixture over the chocolate mixture.
3. Spoon more of the chocolate batter over the cream cheese mixture. The top surface will look marbled. Generously sprinkle chopped nuts all over the top. Repeat the procedure with the other baking pan.
4. Bake in preheat oven for 1hour to one hour and ten minutes, or until a toothpick inserted in center comes out barely clean. Chill well before cutting into bars.

Yield: 24 bars per pan.

Rice Omelette













Ingredients:

3 tbps Chicken breast, chopped
1 cup Button Mushroom, sliced
1 1/2 cups cooked rice
4 tbps Banana Ketchup
2 tsps Soy Sauce
1 tsp worcestershire sauce
6 tbps Cooking oil
1 tsp Onion, finely chopped
1 tsp Garlic, minced
1 tbsp Ham or Hotdog, chopped
Salt and Pepper
4 pcs Eggs
2 tsps Banana Ketchup (for topping)


Procedure:


For the Rice:

1. Saute garlic and onion in Cooking oil, add mushrooms, chicken and ham.
2. Add cooked rice.
3. Add Banana ketchup mixed with Soy Sauce and Worcestershire sauce.
Mix evenly with rice, Salt, and Pepper to taste.
4. Divide into 2 portions. Set aside.

For the egg preparation:

1. Beat eggs, add pinch of salt and pepper.
Divide into two portions.
2. Cook one portion of egg in cooking oil. When egg is almost cooked, fill half of it with one portion of the prepared rice. Fold all sides and roll the egg to cook evenly.
3. Repeat step #2 with the remaining egg portion.
3. Top each roll with Banana Ketchup.

2 big rolls serve 4 persons.
